Can I sacrifice a ship with Kamikaze to destroy an ambushing ship before it gets to deal its ambush damage?

Yes. Kamikaze goes on the pile at the beginning of a battle phase, but ambush doesn't go on the pile until the withdraw step. As soon as the ambushing ship receives damage from kamikaze it is destroyed and does not make it to the withdraw step to deal it's ambush damage.
